Vintage Recipe Week- Day 4

Here is what was happening in the kitchen today. We were so hungry I forgot to take a picture of the enchiladas 🙂

Enchiladas

This recipe was found in a 75 years of Kraft cookbook, which was copyrighted in 1977. This says it could be made ahead, which made this super appealing for me.


Original Recipe:

Ingredients:

1 lb ground beef

1 16oz can tomatoes

1 6oz can tomato paste

½ cup water

½ cup chopped onion

1 tablespoon chili powder

1 ¼ teaspoons salt

¼ teaspoon pepper

1 8oz package tortillas

Oil

2 cups shredded cheddar cheese

Directions:

Brown meat, drain. Add tomatoes and tomato paste, water, onion and seasonings; simmer for 10 minutes. Fry tortillas in hot oil until softened. Place rounded tablespoons of meat sauce and cheese on each tortilla. Roll up tightly. Place seam side down in 11 ¾ x 7 ½ baking dish. Top with remaining sauce and cheese. Cover with aluminum foil, bake at 375 for 25 minutes.

To make ahead: prepare recipe as directed. Cover; refrigerate overnight. Bake at 375 for 50 minutes.

Modifications for 2009:

We didn’t fry the tortillas.

What we thought….

These were yummy, we both liked them. The filling was super thick, so an enchilada sauce would have been good on top.

Original Recipe:

Ingredients:

49 (14 oz bag) Kraft Caramels

3 tablespoons water

2 cups crisp rice cereal

2 cups cornflakes

1 4 oz package of shredded coconut

Directions:

Melt caramels with water in saucepan over low heat, stir constantly until smooth. Pour of combined cereals and coconut. Toss until well coated. Drop rounded tablespoons onto a greased cookie sheet. Let stand until firm

Modifications for 2009:

None

What we thought….

SHAMWOW!!!! Those suckers are sooooooooo good. Seriously, I made 2 dozen of them about an hour ago, and there are 6 left. I can feel my hips expanding.
